The exact origin of soup cannot be traced. But evidence shows, that during the pre-historic era, the nomadic man gathered the remains of plants (roots) and animals (bones, bladder etc) and along with water boiled it over fire and had it as a complete meal.
As civilisations progressed, they devised newer varieties and flavours and soups only kept getting better. ‘Restoratifs’ (the word restaurant is derived from) were the pioneers in introducing soups to public restaurants in 18th century Paris. Broths, bullions entered in main stream soup making.

Soup in Asia
Like the French cuisine, the credit for spreading soups in Asia is attributed to China.
Some where around the 3rd century B.C. China’s dynastic families feasted on a variety fish soups, where as the masses filled their palates with watery mixtures, which, had a hint of vegetables and bean curd flavourings.
With time the civilisation further advanced. Newer varieties came up, but the basic rules of soup making remained the same. Soups began to get localised (flavours and ingredients) and today we have multitude soups from the east.

Mulligatawny a south indian soup which means “pepper water”, a simple broth seasoned with a sharp curry mixture.
Its origin dates back to the British occupation in India, where the soup recipe was instantaneously devised to meet the rising demand.
