Vegetarian Soup Recipes – Wonton Soup
Wontons are dumplings which come with a stuffing of meat and vegetables which are cooked and served differently in parts of China. Each region of China has its own variation of wonton.
In Cantonese cuisine, shrimp filled wonton within minced pork is most commonly served. While in Sichuan cuisine semi-pentagonal wonton are served in a sesame paste and chili oil sauce as a dish called “red oil wonton”. Likewise in Shanghai cuisine with minced meat and bok choy served in chicken soupĀ etc.
In North American or Indian Chinese cuisine, wontons are served in 2 ways as wonton soup (in clear broth), and as an appetizer called fried wontons.
Ingredients:
2 tbsp – Sesame oil
16 No – Wonton wrappers
1/4 cup – Peppers finely chopped
1/4 cup – Peas
1/4 cup – Carrot finely chopped
1/4 cup – Runner beans finely chopped
2 tbsp – Green onions finely chopped
3 tbsp – Spring greens
1/2 tsp – Ginger finely sliced
1/2 tsp – Garlic minced
2 tsp – Rice vinegar
1 tsp – Soy sauce
6 cup – Clear vegetable stock
1 tsp – chili paste
Salt to taste
Method:
Parboil the vegetables strain and set aside.
Heat oil in a pan and add ginger, garlic, onion and saute for a min.
Then add vegetables, chilli paste and salt cook for a few mins.
Put a spoonful of the filling in each wonton and seal it.
Heat the stock and when it comes to a boil stir in the soy sauce and rice vinegar.
Then add the wontons, cook for a while.
Bring the soup to a boil.
