Vegetarian Soup Recipes – Tortilla soup

Tortilla soup is associated with Southwest American cooking, is based on the ingredients commonly found in Mexican cooking, including flour or corn tortillas.
There are many different recipes. But traditionally, the tortilla soup is made from beef or chicken stock and includes tomatoes, onion, garlic and Mexican herb called ‘epazote’.  The soup can be served in 2 ways, either it can be poured overtortilla strips, or else torillas can be cut and added as a garnish.
The soup can be made on the stove top or in a crock pot.

Ingredients:
4 tbsp – Olive oil
5 No – Corn tortillas cut in strips
2 cup – Tomatoes blanched
1 No – White onion chopped
3 No – Jalapenos finely chopped
2 No – Garlic chopped
1 tsp – Ground coriander
1 tsp – Ground cumin
2 No – Vegetable stock cube
2 cup – Water
1/4 cup – Monterey Jack cheese
2 tbsp – Corinader chopped
1/4 tsp – Chilli powder
1/4 cup – Beans (black or red) rinsed
Salt to taste

Method:
Mix olive oil and salt. Dip the tortillas in it and bake till golden and crispy.
Lightly roast the tomatoes and then blend to liquidise.
Heat oil in a pan and briefly saute garlic and onions.
Add the broth and seasonings. Let it cook for a while 10 mins, so that the seasoning flavours blend in the broth.
Stir in the jalapenos, beans and tomatoes.
Let the soup cook on a low heat for about 15 mins. Garnish with cheese. Serve with tortillas.
