Vegetarian Soup Recipes – Thai Hot and Sour Soup
It is a popular Asian soup associated both with Chinese and Thai cuisines. In Thai it is known as ‘Tom Yam’ soup.
In China the soup is a regional cuisine of Beijing and Sichuan made mainly meat based with local vegetables and tofu. While the Thai is a more pungent and savoury version made from traditional herbs and Thai seasonings.
Ingredients:
2 tbsp – Chilli Oil
1 tbsp – Kaffir Lime leaves
1/4 cup – Tofu diced
1/2 cup – Mushroom diced
1/4 cup – French beans cut long
3 cup – Vegetable stock
1 tsp – Lemon grass chopped
1 tbsp – Lemon juice
2 tbsp – Light soy sauce

Method:
In a pan add the stock and stir in the rest except for the chilli oil. Stir and cook till the vegetables are cooked and finally add the spicy oil and serve.
Chilli Oil
1/4 cup – Chilli Oil
1 cup – Shallots chopped finely
1/2 cup – Tamarind pulp
1/2 cup – Water
1/4 cup – Garlic chopped
1/2 cup – Sugar
7 No – Dried red chillies
5 No – Fresh green chillies
4 tbsp – Soy sauce
Method:
Heat oil in a pan and add the garlic, shallots and chillies.
Then turn off the heat and grind the ingredients to get a smooth paste.
Pour the mix back into the pan and add the tamarind with sugar, soy sauce.
Re-heat and cook till you get a good glaze. Buy ready to eat Vegan Hot & Sour Noodle Soup
Vegetable Stock
1 No – Onion
2 No – Carrot
2 No – Celery stalks
6-7 No – Peppercorns
4 No – Coriander roots
4 cup – Water
Method:
Boil water in a pan and add all the finely chopped ingredients and cook till the water halves. Then strain and set the mix aside.
