Vegetarian Soup Recipes – Thai Coconut Cream Soup
Ingredients:
2 tbsp – Sesame oil
100 gms – Green beans cut in cut into 1/2″ strips
100 gms – Broccoli florets
1 tbsp – Green or Red curry paste
200 gms – Tofu cut into 1/2″ strips
1 No – Aubergine cut into 1″ pieces
1 tbsp – Light soy sauce
3 cup – Vegetable clear stock
3 cup – Coconut milk thick + 1 tbsp corn flour
1/4 cup – Basil fresh
2 No – Green or red chillies slit
3 No – Kaffir Lime leaves
2 Sticks – Lemon grass
Salt to taste
Pepper to taste
Set of Fresh Kaffir Lime Leaves, Lemon Grass, Galangal, Thai Chili
Method:
Heat oil in a pan, add curry paste and fry over medium flame.
Add the vegetables and cook for a few 3-5 mins.
Add the vegetable stock, coconut milk and soy sauce and bring to a boil. Let the mix cook till the vegetables are soft.
Add the remaining ingredients with the tofu.
Garnish with chillies and serve hot.
