Vegetarian Soup Recipes – Pumpkin Soup
Ingredients:
1 cup – Pumpkin peeled chopped
1/2 tsp – Ginger finely sliced
2 tbsp – Lemon grass chopped
1 No – Stock cube crushed
5 cup – Water
2 tsp – Lemon juice
Salt to taste
Pepper to taste
Method:
Boil on high for 15-20 mins. Turn off heat.
Remove lemon grass and ginger.
Pour the soup in a bowl and serve hot.
Variation
Ingredients:
1/2 cup – Pumpkin chopped
1/4 cup – Pumpkin pureed
1 tsp – Ginger finely sliced
2 tbsp – Lemon grass chopped
1 No – Onion/ shallot chopped
1 tbsp – Thai curry paste
1 No – Chilli sliced
3 tbsp – Coconut milk
1 1/2 Cup – Broth
Salt to taste
Method:
Heat oil in a pan with the onion, chilli, ginger and lemongrass cook until softened.
Stir in the curry paste followed by the pumpkin, coconut milk and stock.
Bring to a simmer, cook for 5 mins, then remove the lemon grass. Serve hot.
You can also add toss the pumpkins in some oil and stir fry or bake.Then add to the soup.
