Vegetarian Soup Recipes – Peanut Tofu Soup

Ingredients:
1 tbsp – Oil
3 cup – Vegetable Stock
8 No – Bamboo shoots cut into thin strips
8 No – Chestnuts chopped
1/2 tsp – Garlic chopped
1 No – Green chilli chopped
2 No – Green onion chopped
1/4 cup – Mushrooms chopped
1 tsp – Sweet chilli sauce
1/4 block – Tofu diced
1/4 – 1/2 tsp – Corn flour
1 tbsp – Soy sauce
2 tbsp – Peanut
Salt to taste

Method:
Boil the vegetables except greens in some water (1/4 cup).
Heat oil in a stock pot and fry the onions, garlic and chillies for 1-2 mins.
Then add the vegetables and sauces and cook for 1-2 mins.
Add the peanut and stock let the mix simmer for a while.
Reduce heat andwhen nearly done, add corn flour mixed with water to thicken the soup. Bring to a boil.
