Vegetarian Soup Recipes – Mushroom Soup
Ingredients:
1 tbsp – Oil
1/2 cup – Button mushrooms
3 tbsp – French beans finely sliced
3 tbsp – Pepper finely sliced
2 tbsp – Carrot grated
1/4 tsp – Ginger grated
1 No – Celery finely sliced
1 No – Spring onion finely sliced
1 No – Garlic clove finely chopped
2 tsp – Light soy sauce
1 tbsp – Green chilli sauce
2 1/2 cup – Clear stock
Salt to taste
Pepper to taste

Garnish
1 tsp – Chilli Oil
1 tbsp – Greens chopped
Method:
Heat oil in a pan and fry ginger, garlic and spring onion for a min.
Add the vegetables and saute for 2-3 mins.
Add the stock and seasoning and bring to a boil.
Garnish with chilli oil and greens.
To make the sauce thick you can dissolve 1/4 – 1/2 tsp corn flour in 1/4 cup water.
Mushroom Tips
Button mushrooms are the most easily available ones. They are a common addition to salads, stir fries, soup, noodle and rice recipes.
They pair well with shallots, butter and herbs. Cooking intensifies their flavour, but also offers a richer texture especially in making of soups and sauces.
Mushroom powder can easily be made by grinding dried mushrooms in a spice or coffee grinder, food processor or with a blender. Such powders are used to flavour soups, stews, stocks, dips, and sauces.
Don’t throw away mushroom stems. Trim and freeze them to use in soups and stocks.
