Vegetarian Soup Recipes – Lentil Soup

Lentil soup is primarily a vegetarian or vegan dish which is made from a mix of beans, lentils and hearty vegetables. Lentil soups are recognised as being highly nutritious. They are a good source of protein, dietary fiber, iron and potassium. The lentils most commonly used for soup include brown, black, and green or else you can mix all varieties and use as well. For soups and stews its better to soak dried lentils and then use.

Ingredients:
2 tbsp – Olive oil
1 No – Bay leaf
1 No – Onion large chopped
1/2 tbsp – Garlic chopped
1 cup – Brown lentil
1/2 cup – Red Lentils
1 No – Carrot large chopped
1 No – Potato large chopped
2 cup – Tomatoes chopped
1 cup – Spinach chopped
7 cup – Water
1 tbsp – Lime juice
1/2 tsp – Red chilli powder
1/2 tsp – Coriander powder
1 tsp – Coriander (optional)
Pinch of ginger powder
Salt to taste
Pepper to taste

Method:
Heat oil in a stock pot and fry bay leaf onion, carrots and garlic till brown.
Add the potatoes, tomatoes, spinach and seasonings and continue to cook for about 5 mins.
Add lentils and water.
Cover the pot and simmer for 2 1/2 hours, or till the lentils are tender.
Discard the bay leaf.
Take some portion of the soup and blend it in a food processor.
Or roughly run the hand blender in some parts, while leave the rest as it is, so as to get a nice chunky soup. Serve hot with bread. Authentic ready cans of Light in Sodium Organic Lentil Soup
