Vegetarian Soup Recipes – Goulash

Originating in Hungary, goulash is a popular dish across Eastern Europe and North Eastern Italy. It is primarily a soup or stew prepared with a combination of different types of meat vegetables seasoned with paprika and served over noodles or rice.
In Hungary traditional gulyásleves (‘goulash soup’), was made by cattle herders and stockmen tending their herds on the Great Hungarian Plain. Originally the dish was similar to a stew and was called ‘bogracsgulyas’. But when served in Hungarian restaurants it is a soup. Except ‘paprikás’ (paprika chicken stew), no other relies on flours or roux for thickening.

Some popular Hungarian goulash variations:
Gulyás Hungarian Plain Style – vegetables are added and pasta (csipetke) is left out.
Mock Gulyás – made from meat and vegetables.
Bean Gulyás – made from kidney beans.

Ingredients:
3 tbsp – Vegetable oil
5 cup – Water/stock
1 No – Bay leaf
1 No – Pepper medium chopped
1 – Onion medium chopped
1/2 No- Carrot medium chopped
5 No – Mushroom chopped
8-10 No – Cabbage leaves finely chopped
1 No – Zucchini medium chopped
1 No – Potato chopped
2 No – Tomatoes chopped
3 tbsp – Celery chopped
1 tbsp – Garlic crushed
2 tsp – Lemon juice
1 tsp – Black pepper
1 1/2 tsp – Sweet paprika
Pinch of Caraway powder
Salt to taste

Method:
Heat oil in a pan and add onions and saute till golden brown.
Add the remaining vegetables and cook till tender.
Now add some paprika powder and mix well (the fat and vegetable juice will prevent it from getting burnt).
Add some crushed garlic along with the remaining seasonings tomatoes and water and let the mix simmer for a while 15-20 mins. Serve hot with bread.
