Vegetarian Soup Recipes – Broccoli Boursin Soup
Ingredients:
3 tbsp – Butter
1 tbsp – Sunflower oil
1 No – Zucchini large chopped
1 No – Celery stem chopped
500 gms – Borccoli florets chopped
1 No – Onion large chopped
1 No – Carrot large chopped
1 No – Potato medium parboiled
1 No – White pumpkin 2″ piece chopped
1 No – Garlic clove
7 1/2 cup – Stock/Water
3/4 cup – Borusin cheese
Salt to taste
Pepper to taste
Garnish
2 tsp – Almond flakes
2 tbsp – Whipping cream
Method:
Put all the vegetables in stock pot and add butter, oil and add 3 tbsp of water.
Heat till all the ingredients begin to sizzle.
Cover and cook shaking gently till all the vegetables go gentle.
Add the remaining water along with seasoning and bring to a boil.
Cover and simmer for 1/2 hour.
Strain the vegetables, liquidise and strain and add back to the pot with the reserve liquid.
Bring the soup to a boil and add cheese. Cook till cheese melts.
Garnish with almonds and whipped bread.
If you do not have boursin cheese then replace it with any other cheese of your choice.
You may choose to substitute broccoli with cauliflower.
