Cabbage Soup


Ingredients:
1 tbsp - Oil
1/4 tsp - Ginger finely chopped
1/2 tsp - Garlic finely chopped
2 cup - Chinese cabbage shredded
1/4 cup - Mushrooms sliced
4 tbsp - Spring onion greens chopped
1 tbsp - Soy sauce
2 No - Veg seasoning cube
2 cup - Water
Pepper to taste


Method:
Heat oil in a sauce pan and add ginger, garlic and cook till soft.
Dissolve the cubes in water.
Add the rest and cook on a low flame till done. The New Cabbage Soup Diet

Vegetarian Soup Recipes - 8


Thai Hot and Sour Soup


Ingredients:
2 tbsp - Chilli Oil
1 tbsp - Kaffir Lime leaves
1/4 cup - Tofu diced
1/2 cup - Mushroom diced
1/4 cup - French beans cut long
3 cup - Vegetable stock
1 tsp - Lemon grass chopped
1 tbsp - Lemon juice
2 tbsp - Light soy sauce


Method:
In a pan add the stock and stir in the rest except for the chilli oil. Stir and cook till the vegetables are cooked and finally add the spicy oil and serve.


Chilli Oil
1/4 cup - Oil
1 cup - Shallots chopped finely
1/2 cup - Tamarind pulp
1/2 cup - Water
1/4 cup - Garlic chopped
1/2 cup - Sugar
7 No - Dried red chillies
5 No - Fresh green chillies
4 tbsp - Soy sauce


Method:
Heat oil in a pan and add the garlic, shallots and chillies.
Then turn off the heat and grind the ingredients to get a smooth paste.
Pour the mix back into the pan and add the tamarind with sugar, soy sauce.

Vegetable Stock
1 No - Onion
2 No - Carrot
2 No - Celery stalks
6-7 No - Peppercorns
4 No - Coriander roots
4 cup - Water


Method:
Boil water in a pan and add all the finely chopped ingredients and cook till the water halves and then strain and set the mix aside.
