Vegetarian Soup RecipesVegetarian Soup Recipes - 6Spinach Soup Ingredients: 1 tbsp - Oil 2 cup - Spinach chopped 1/2 cup - Mushrooms chopped 1/2 No - Tomato finely chopped blanched (optional) 1/2 tbsp - Soy sauce (optional) Pepper to taste Salt to taste Marination 1 tbsp - Garlic chopped 1 tbsp - Soy sauce 1/4 tsp - Pepper 1 tsp - Corn flour 3 cup - Water Method: Marinate mushrooms in the soy - garlic dressing for about 1 hour. Heat oil in a pan and briefly stir fry the marinate ingredients. Add spinach and tomato and continue to cook for another 2-3 mins. Add water, seasonings (if needed) and bring the soup to a boil. Simmer for 10-12 mins. Serve hot. You can replace mushrooms with tofu or add both. Vegetarian Soup Recipes - 7 Noodle Soup Ingredients: 2 tbsp - Oil 1 tbsp - Soy sauce 1 pack - Amoy noodles (ready to wok) 1 tsp - Garlic finely chopped 1 No - Spring white finely sliced 1/4 cup - Bean Sprouts 2 No - Baby corn slit 1 No - Zucchini small finely sliced 1 No - Pepper medium finely sliced 5 No - Snow peas 1/4 cup - Mushrooms 1 No - Carrot small finely sliced 3 cup - Stock 1 No - Green chilli finely chopped 1 tsp - Vinegar Salt to taste Pepper to taste Method: Heat oil in a wok or pan and saute spring onions, green chilli and garlic till translucent. Add the remaining vegetables and continue to cook over a high flame. Cook till the vegetables are soft but firm. In another pan boil the stock, stir in soy sauce, and add the noodles. Simmer till the noodles have separated. Add the rest and continue to simmer and cook for about 20 mins. Serve hot. Move to vegetarian soup main page Return to homepage |
