Vegetarian Soup RecipesVegetarian Soup Recipes - 11Peanut and Tofu Soup Ingredients: 1 tbsp - Oil 3 cup - Vegetable Stock 8 No - Bamboo shoots cut into thin strips 8 No - Chestnuts chopped 1/2 tsp - Garlic chopped 1 No - Green chilli chopped 2 No - Green onion chopped 1/4 cup - Mushrooms chopped 1/4 block - Tofu diced 1 tbsp - Soy sauce 2 tbsp - Peanut Planters Cocktail Peanuts, 35-Ounce Plastic Jars (Pack of 3) 1 tbsp - Corn flour with water Salt to taste Method: Boil the vegetables except greens in some water (1/4 cup). Heat oil in a stock pot and fry the onions, garlic and chillies for a 1-2 mins. Then add the remaining vegetables and cook for 1-2 mins. Add the stock simmer and cook for a while. Reduce heat and let the mix simmer till done. Then add corn flour mixed with water to thicken the soup. Bring to a boil. Garnish with greens and serve.
