Vegetarian Quiche Recipe

There is a common misconception to the origin of quiche. People believe it to be a classic French dish. But actually quiche originated in Germany, in the medieval kingdom of Lothringen. The original 'quiche Lorraine' was made of eggs, liquid and cream custard with smoked bacon. Cheese was added much later. Quiche became popular in England after the World War II and in U.S. in the 1950's.
Many varieties, have originated from quiche Lorraine. Such as quiche with vegetables, desert quiche made with fruit and custards.


Vegetarian quiche recipe made its way to my kitchen in an interesting episode.

I knew all about quiches but never had an opportunity to taste a vegetarian (eggless) variety until I ended up in the Govinda restaurant at Oxford Street and had a lovely vegetable quiche. Thereafter I frequently went there, until I thought of trying my hands on it.

Since I have previously done a bakery course, it was not difficult to get the pie crust (Buy Nordic Hi-Dome Pie Pan) correct. However, I did have a problem with the filling twice.
I would like to make a suggestion, if at all you're making a recipe for the first time, make small quantity as a taster.
Choose the a simple vegetarian quiche recipe.
Secondly, if you do not find any particular ingredient which the recipe suggests for e.g. Swiss cheese and you have cheddar cheese go ahead and try the quiche with it.
If you find the dish appealing next time use Swiss cheese. You'll be a better judge of which cheese flavour you prefer more.

But please remember this trick does not work with every single dish that we make. So please be discreet in what you choose.

Before proceeding ahead with the vegetarian quiche recipe. You will need to prepare a crust for your quiche.
You can either buy a ready frozen quiche crust or a fresh one or alternatively make one. But first Buy Quiche Pan with Removable Bottom

                                           

Basic Pastry crust or Quiche crust


Ingredients:
1 cup - Whole wheat pastry flour or All purpose flour
4 tbsp - Butter
1 tsp - Sugar Powdered
2 tbsp - Milk
1 tbsp - Cold water
1/2 tsp - Salt


Method:
Mix flour, sugar and salt together.
Make a well in the center and add butter and milk to it. If needed, you can also add some more cold water or milk to get a moistened flour mix. But make sure the mix does not get soggy.
Preferably, work with your hands to get the right consistency in the dough.
Gather the flour to get a soft firm dough. It's best if you could freeze the dough from 3 hours to overnight.
Add a little flour on a rounded surface and roll out the dough using a rolling pin.
Place the dough over the pie plate and press it against the bottom and sides of the plate and crimp the edges. Better still Buy Pie Crust Shield
Prick the pastry all over using a fork and bake in a preheated oven of approx. 200oC.

Please remember for making a good quiche you need cold ingredients, i.e. fat(butter), milk and water and minimum handling.
Both these factors help in preparing a soft tender crust.
