Vegetarian Quiche Recipe – Vegetable Quiche

Vegetarian Quiche Crust

Ingredients:
1 1/2 cup – Whole wheat flour
1/2 cup – Butter
1/3 cup – Parmesan cheese
5 tbsp – Water

Method:
Blend the first 3 ingredients together.
Gradually add water as needed and then pat the mixture on the bottom and along aside a 9 inch quiche pan.
Bake till done.

Ingredients:
1/2 cup – Zucchini sliced
1/4 cup – Carrot sliced
1/4 cup – Onion sliced
1/4 cup – Artichokes sliced
1/4 cup – Leeks sliced
1/2  cup – Peppers sliced
1/2 cup – Monterrey jack cheese
1 cup – Parmesan cheese
1 1/4 cup – Sour cream
1 tbsp – Cornstarch
1/4 tsp – Pepper
Salt as needed

Method:
Heat oil in a pan add the onions and cook till pink.
Then add the other vegetables and cook till little soft.
Mix the cheese (1/2 jack cheese), flour seasonings and sour cream in a large bowl.
Fold in the vegetables and pour the mix in the pie crust. Garnish with remaining cheese and bake till done approx. (35-40 mins).
