Vegetarian Quiche Recipe – Spinach Quiche
Ingredients:
1 No – Pastry crust
1/2 tbsp – Olive oil
1/2 tbsp – Butter
2 No – Garlic clove minced
1 No – Onion chopped
1 1/4 cup – Spinach chopped
1 cup – Cottage cheese/panner grated
5 tbsp – Cheese
1/4 cup – Mayonnaise
1/4 tsp – Mustard powder
1/4 tsp – Nutmeg powder
1 tbsp – Lemon juice
Salt to taste
Method:
Heat a large sauté pan melt the butter with the olive oil.
Add the onion and garlic and sauté until soft.
Add the spinach and sauté, stirring, until completely wilted.
In a large bowl whisk mayo, cheese and lemon juice till smooth.
Puree the tofu and then combine all the ingredients.
Pour into pre-cooked pie crust, and bake until quiche is set. Allow to sit for 5 minutes before cutting.
