Vegetarian Quiche Recipe – Mushroom Quiche

The discovery of mushrooms dates back 4600 years ago to the Egyptian civilisation. The delicious flavour of mushrooms intrigued the pharaohs to such an extent that they decreed mushrooms were food for royalty and that no commoner could ever touch them.
While others believe that Louis XIV of France was the first mushroom grower. From there on the popularity spread all the way to England and by the late 19th century, mushroom production made its way across the Atlantic to the United States.

Ingredients:
Pastry crust
1 tbsp – Olive oil
2 tbsp – Butter
1 1/2 cup – Mushrooms sliced
1/2 cup – Cheddar cheese
1/4 cup – Gouda cheese
1 cup – Milk
1 tbsp – Plain flour
1 tbsp – Corn flour
1/8 cup – Fresh Cream
1/2 tsp – Baking powder
1/4 tsp – Pepper
1/4 tsp – Nutmeg
1/4 tsp – Chilli flakes
Salt to taste

Method:
Heat butter in a pan add the mushrooms and sauté.
Just prior to taking of the pan add olive oil and cook for 1-2 mins. Drain and set aside.
Whisk all the ingredients till creamy.
Fold in the mushrooms.
Pour the mix in the quiche crust and bake till golden.
