Vegetarian Quiche Recipe – Corn Sundried Tomato Quiche
Ingredients:
1/4 cup – Corn kernels boiled
1/4 cup – Sun dried tomatoes
1/4 cup – Black pitted olives
1 tbsp – Chives chopped
1 tbsp – Tabasco
1 No – Bell peppers chopped
1 No – Spring onion chopped
1/4 tsp – Cornflour
1/4 cup – Cream cheese
1/4 cup – Marinara sauce
1/2 cup – Pizza cheese
Salt to taste
Method:
Heat oil in a pan and sauté the peppers and onion till soft.
Add the corns and seasonings mix well and turn off heat.
In a large bowl mix the last 4 ingredients.
Fold in the rest (leaving 2 tbsp of olives and tomatoes).
Spread the mix over the base of pastry case.
Garnish with the remaining tomatoes. Bake till done.
