Vegetarian Quiche Recipe – Caramelised Onion Quiche

Begin with an eggless pastry crust

Ingredients:
190 gms – Plain flour
70 gms – Butter chilled
1/2 tsp – Caraway seeds
1/4 tsp – Salt
5 tbsp – Iced water

Method:
In a large bowl combine the flour, cumin seeds, butter and salt.
Rub the mixture with your fingertips until it resembles fine breadcrumbs.
Add the iced water and bring the mixtures together to form a firm dough.
Cover in cling film and refrigerate for 10 mins.
Add a little flour on a rounded surface and roll out the dough using a rolling pin.
Place the dough over the pie plate and press it against the bottom and sides of the plate and crimp the edges. Bake for 20-25 mins.

Filling

Ingredients:
1 tbsp – Olive oil
120 gms – Red onion large sliced
70 gms – Swede or sweet potato diced
100 gms – Feta cheese
1 tbsp – Self raising flour
1 tsp – Conrn flour (optional)
200 ml – Milk
200 gms – Fresh cream
50 gms – Cheddar cheese
1 tsp – Thyme dried
2 tsp – Brown sugar
1 tsp – Balsamic vinegar

Method:

Caramalise onions
Heat the oil in a pan till hot and then add onions.
Cook on a low heat for around 10 mins stirring occassionally.
Add one pinch of salt. Salt will not only enhance the flavour of the onions but will also help to draw out water and make it easier for the sugar to caramelise.
Add the sugar and keeps stirring as the onions begin to caramelise they will start to stick to the bottom of the pan.
Once the onions are almost done, add balsamic vinegar and thyme mix and turn off heat.

Place the potatoes in a vegetable steamer and cook for 5 mins.
Whisk the cheese and flour in another pan till smooth (added corn flour for thickness ony if necessary) .
Fold in the onions and potatoes and pour the mix in the baked pie crust. Bake till done (aprrox 35-40 mins).
