Vegetarian Quiche Recipe – Broccoli Quiche
Broccoli is very nutritious and a strong pick for its fiber content, minerals and immunity-blocking properties.
For women and young children who suffer from milk allergies, broccoli makes a vital enhancement to their diet.
So though, you may dislike the vegetable but for its nutrient value, there are several ways to incorporate it in the meal by toning down the flavour.
You can chop it in bit size pieces and add it to pasta sauce or mix it with greens for a stir fry. Use it in combination with cauliflower to prepare casseroles or quiches.

gravy
ranch dressing
blue cheese dressing
balsamic vinegar dressing
While choosing broccoli, look out for fresh, healthy dark green florets which are close and tight. Broccoli with yellow florets is not only stale but could be full of insects too.
Ingredients: 
1/4 cup – Broccoli/cauliflower chopped
1/4 cup – Rice cooked mashed
1/4 tsp – Rice flour (optional)
1/4 cup – Beans cooked mashed
1 tbsp – Butter
1/4 cup – Thick curd (yogurt)
1/4 cup – Mayonnaise
1/8 cup – Fresh Cream
2 No – Garlic clove minced
1/2 tsp – Mustard
1/8 cup – Parmesan Cheese
Salt to taste
Method:
Steam the broccoli for 5 mins in a vegetable steamer and set aside.
Combine beans, rice, rice flour and butter add a little salt (if necessary) and press the mix at the base of a greased pie plate to form a crust.
Whisk the last 7 ingredients till smooth.
Fold in the rest and pour the mix in the pie crust. Bake till done approx. (35-40 mins).
