Vegetarian Quiche Recipe - 3


Corn and Sundried Tomato Quiche


Ingredients:
1 No - Pastry crust
1 cup - Corn kernels
1 No - Potatoes medium mashed
1 No - Yellow or Green Bell Pepper finely chopped
1/2 tsp - Garlic powder
1/4 cup - Green onion with leaves finely chopped
2 tsp - Tabasco
1/4 tsp - Chives
1 tsp - Fresh basil or tarragon leaves
1/2 cup -White sauce
1 cup - Cheddar cheese or Monterey Jack
10-12 No - Sun dried tomatoes California Sun-Dry Sun Dried Tomatoes (Julienne Cut), 3-Ounce
Salt to taste


Method:
In a large bowl mix all the ingredients except tomatoes, white sauce and cheese.
Whisk the white sauce and cheese together and pour over the ingredients.
Scoop filling into pastry crust and spread it evenly.
Garnish with sun dried tomatoes.
Bake till done.


Quiche Recipe - 4


Rice Bean Quiche


Ingredients:
1 No - Pastry crust
1/2 cup - Rice
1 No - Onion chopped
1 tsp - Garlic minced
1/2 tsp - Red chilli powder
1/2 cup - Red kidney or Black beans cooked Eden Organic Black Beans, 15-Ounce Unit (Pack of 12)
2 No - Green Peppers finely chopped
1 No - Tomato finely chopped
1/8 tsp - Pepper
1 tbsp - Fresh Parsley
1/2 tsp - Cilantro finely chopped
1/2 cup - Sour cream
1 cup - Cheddar cheese grated
Salt to taste


Method:
Heat oil in a pan and saute the onion, garlic and peppers.
Mix all the ingredients and seasonings except for cheese and cream.
Whisk the cream with cheese and pour over the rice mix.
Bake till done. Lundberg Wild Blend, Gourmet Blend of Wild and Whole Grain Brown Rice
