Vegetarian Pasta Recipes – Roasted Vegetable Pasta

Ingredients:
200 gms – Penne pasta
4 tbsp – Olive oil
1 No – Zucchini medium sliced
2 No – Peppers medium sliced
10 No – Broccoli florets chopped
2 No – Aubergines small variety
1 No – Red onion large finely diced
10 No – Ripe tomatoes
1/4 inch – Ginger finely chopped
4 No – Chilli peppers
4 No – Garlic cloves finely chopped
1 No – Seasoning cube crushed
2 tbsp – Basil finely chopped
1 tsp – Balsamic vinegar
1/8 cup – Cheese sauce (optional)
Sea salt to taste

Method:
Roast the tomatoes and chilli peppers over the gas till charred. Let it cool and then finely chop them or grind to puree half and chop the remaining half.
Toss the vegetables in oil and place under hot grill and roast till light brown. Remove and set aside.
Heat oil in a pan and add the onion, ginger and garlic and cook till colour changes.
Add the tomatoes and seasoning and cook for a few mins. (Thereafter, you may choose to add some cheese sauce as well).
Add the pasta toss and serve.
