Vegetarian Pasta Recipes – Moroccan Spaghetti
Ingredients:
200 gms – Spaghetti cooked
1/8 cup – Olive oil
1 No - Onion red chopped
3 No – Garlic cloves minced
1 cup – Ripe tomatoes chopped
1 tsp – Coriander powder
1/8 tsp – Cumin powder
1 tsp – Tamarind juice
1/8 tsp – Turmeric
8-10 No – Saffron strands
1 cup – Chickpeas cooked
5 No – Dry red chillies
1 No – Green pepper chopped small
4 tbsp – Cliantro chopped
4 tbsp – Mint chopped
1 tbsp – Almonds sliced toasted
Salt to taste
Method:
Dissolve the saffron in in 1 tbsp water.
Cook the spaghetti drain and set aside.
Heat some oil in a pan saute the onion, peppers and garlic in a pan for 5 mins.
Grind the tamarind juice, tomato paste and chillies to a fine paste (use water if necessary).
Add the tomatoes, tomato-chilli paste along with the spices and saffron an cook until aromatic.
Add the chickpeas and cook for 2-3 minutes.
Add the spaghetti remaining olive oil and toss.
Garnish with cliantro, mint and nuts serve.
