Vegetarian Pasta Recipes – Fettuccini Pasta
An Italian restaurateur Alfredo di Lelio invented fettucini pasta, for the waning appetite of his pregnant wife. Once she began eating, he added the dish in his restaurant menu.
The restaurant became famous, when Hollywood stars Mary Pickford and Douglas Fairbanks visited the restaurant in 1920′s. They simply loved the dish and carried the recipe back home.
Though Lelio named the dish after him. But the dish is popular as fettuccine al burro e panna, which is, fettuccine pasta mixed with cheese, butter and heavy cream. The creamy Alfredo sauce had its origin here. Preapre Fettucini at home with Fettucini Alfredo Mix
Fettuccine Al Burro
Ingredients:
450 gms – Fettuccine (flat noodles)
125 gms – Butter softened
50 gms – Double cream
50 gms – Parmesan cheese grated
1/4 tsp – Pepper
10-12 NO – Mushrooms chopped (optional)
Salt to taste
Method:
Cook pasta and keep aside.
Cream the butter until light and fluffy.
Beat the cream little at a time. Then add the cheese with the seasoning.
Add these to the fettuccini and mix until well combined.

You can garnish with sauteed mushrooms if you like.
Saute mushrooms in butter with a drizzle of garlic and add it to the fettuccini. It gives a great flavour to the recipe.
Fettuccini Bean Walnut Pasta
Ingredients:
3 tbsp – Butter
200 gms – Fettuccini fresh or dried
250 gms – Green beans sliced into inch pieces
1/2 cup – Walnuts chopped toasted
4 No – Spring onion stems finely chopped
2 No – Garlic finely chopped
1/2 cup – Basil chopped
1 1/2 cup – Fresh cream or thick milk
1 1/2 cup – Vegetable stock
Parmesan cheese as needed
Chilli flakes as needed
Salt to taste

Method:
Cook pasta and keep aside.
Heat the olive oil in a pan add green onions and cook for 2 mins.
Add 2 tbsp of basil, garlic, stock and a pinch of salt.
Cook till the onions are soft and then add cream. Let the cream till it is a little thick and add the remaining seasoning.
In another pot boil water and add the beans with little salt.
Cook till tender but firm and then remove and add the beans to the above mix.
In the same water cook the pasta and then remove and add it to the cream mix along with the basil.
Keep warm on a heated plate and just before serving garnish with walnuts and cheese.
Serve with garlic bread.
