Vegetarian Pasta Recipes - 11


Garlic Soy Spaghetti


Ingredients:
170 gm - Spaghetti
1 tbsp - Garlic finely chopped
1 cup - Mixed vegetables sliced or chopped
2 No - Green chillies finely chopped
1/4 tsp - Honey
1/4 cup - Cilantro finely chopped
1/4 cup - Soy sauce
1 tsp - Vinegar (optional)
1/4 tsp - Pepper
Salt to taste


Method:
Heat oil in a pan and saute the vegetables. Ancient Harvest Quinoa Pasta, Spaghetti Style, Supergrain
Heat oil in a pan and saute garlic and chillies, cilantro for about 1-2 mins.
Add the remaining seasonings and mix well.
Add the vegetables and cook on a high flame till well combined. Add the spaghetti and serve.


Pasta Recipe - 12


Lemon Thyme Pasta


Ingredients:
2 tbsp - Olive oil
2 cup - Pasta
1 tbsp - Garlic finely chopped
4 tbsp - Mushrooms diced
4 tbsp - Black olives pitted
4 tbsp - Cottage cheese cubes
4 tbsp - Peppers diced
4 tbsp - Corns boiled
2 tbsp - Thyme finely chopped
1/2 tsp - Lemon zest grated
1/2 No - Lemon
1/2 cup - Vegetable stock
1 tsp - Honey
2 tbsp - Parmesan cheese
1/4 tsp - Pepper
Salt to taste
Red pepper flakes


Method:
Heat olive oil in a large pan over medium heat.
Season the vegetables pieces with salt and freshly ground black pepper.
Cook them till lightly brown. Once the pieces are browned remove and set aside.
Deglaze the pan with lemon juice.
Scrape out the browned bits from the bottom of the pan.
Add the vegetable stock and let liquids reduce by half.
Add the thyme, lemon zest, honey and salt.
Reduce the sauce further.
Stir in the cheese.
Add the boiled pasta and vegetables.
Garnish with red pepper flakes and serve.
