Vegetarian Pasta RecipesVegetarian Pasta Recipes - 2Bean Cannelloni Ingredients: 2 tbsp - Olive Oil 12 No - Cannelloni 1 tsp - Rosemary 1 tsp - Basil 1 tbsp - Garlic minced 1 No - Onion chopped 1 tin - Kidney/Pinto beans drained and rinsed 1 No - Bell peppers roasted chopped 3/4 cup - Cheese grated 1 1/4 cup - Tomato sauce Pepper to taste Salt to taste Method: Heat oil in a pan over medium heat and saute onion and garlic till colour changes. Add the peppers and stir fry for about 2 mins. Add the herbs and cook with mashed beans and tomato sauce. Add 1/2 the cheese. Spoon the mix in cannelloni and place it in a baking tray. Lightly grease the baking tray so that the food does not stick to it. Garnish with the remaining cheese and bake. Ingredients: 2 cup - Penne Pasta Tinkyada Brown Rice Penne Pasta with Rice Bran, 16-Ounce 4 tbsp - Butter 1 No - Onion chopped 1/4 tsp - Garlic finely chopped or minced 2 No - Bell peppers chopped 1 No - Zucchini chopped 5 No - Mushrooms 1 No - Eggplant chopped 1 No - Carrot chopped 9 No - Tomatoes chopped chooped peeled or 1/2 No - Tin tomatoes 1/2 cup - Parmesan cheese 2 tbsp - Basil fresh Pepper to taste Salt to taste Method: Heat butter in a sauce pan over medium flame and fry the garlic till colour changes. Lay the vegetables over a baking tray and drizzle the butter garlic mix over it. Make sure the vegetables are well coated with the fat, before you start roasting. If needed add some more butter. In a separate tray grill the tomatoes. Let the tomatoes cool and then puree them. Add the seasonings, vegetables, cooked pasta and cheese to the puree.
