Vegetarian Casserole Recipe – Vegetable Casserole

Ingredients:
1 tbsp – Olive oil
1 No – Zucchini diced
1 No – Bell pepper diced
1 No – Carrot diced
5 No – Baby corns diced
1 No – Red onion diced
1 No – Tomato diced
1/2 cup – Red sauce
1/4 tsp – Mixed herbs
1/2 cup – Sour cream
1/2 cup – Cheese
1/2 tbsp – Flour
Salt to taste

Method:
Heat oil in a pan and saute onion for 2-3 mins.
Add the vegetables and cook for additional for 2-3 mins and set aside.
Prepare the sauce stir in the flour and 1/2 the cheese. Mix till well combined. Turn off heat.
Add the vegetables and sour cream to the above mix combine and pour in a casserole dish.
Garnish with the remaining cheese and bake.
