Vegetarian Casserole Recipe – Rice Casserole

Ingredients:
2 tbsp – Olive oil
2 cup – Rice cooked
2-3 No – Shallots diced
1 No – Carrot medium diced
8-10 No – Swede pieces diced
10-12 No – Runner beans diced
8-10 No – Broccoli florets diced
1 tbsp – Parsley chopped
1/2 tsp – Garlic crushed
1/4 cup – Vegetable Stock
1/4 cup – Bread crumbs
1 cup – Cheese
1 tbsp – Hot sauce
Salt to taste

Method:
Heat oil in a pan and sauté the vegetables for 3-4 mins.
Add the vegetable stock, herbs and seasonings and mix till well combined about 5 mins.
Add the bread crumbs, 1/2 cheese and combine.
Place the mix in a casserole dish and garnish with remaining cheese and bake.
