Vegetarian Casserole Recipe – Noodle Casserole

Ingredients:
2 tbsp – Oil
150 gms – Noodles
2 tbsp – Thai red curry paste
3 tbsp – Shallots diced
3 tbsp – Baby corns diced
3 tbsp – Button mushrooms diced
8 No – Tofu pieces (Mori Nu, Lite Silken Firm) diced
1/8 cup – Tofu grated
3 tbsp – Peas
3 tbsp – Carrot diced
3 tbsp – Cauliflower florets diced
1 cup – Coconut milk thick
Salt to taste

Seasoning Mix
1 tsp – Brown sugar
1 tsp – Coriander powder
1/4 tsp – Turmeric powder
1 1/2 tsp – Lemon grass chopped
1 1/2 tsp – Kaffir lime leaves chopped
1 tbsp – Light soy sauce

Method:
Soak the vegetables and tofu in the seasoning mix for 20 mins.
Heat oil and add the curry paste and stir for 30 secs.
Add the vegetables and stir fry on a high flame for 3-4 mins.
Add noodles and mix and turn off heat.
Add the coconut milk and combine. Garnish with grated tofu and bake in the oven till golden brown.
