Vegetarian Casserole Recipe – Italian Casserole
Ingredients:
1/2 cup – Cream Cheese
1/4 cup – Mozarella Cheese
1/4 cup – Cheddar Cheese
2 No – Bell peppers roasted sliced
2 No – Aubergines sliced
1/8 cup – White beans cooked
1 No – Spring onion sliced
3 No – Garlic clove minced
1 tsp – Balsamic vinegar
1 tsp – Chives dried
1 tbsp – Oregano/basil chopped
1 tbsp – Walnuts sliced toasted
Salt to taste
Method:
Heat oil in a pan and sauté the spring onion and garlic till pink.
Add the aubergines and cook till crisp and brown.
Add the peppers, herbs and seasonings and mix well.
Then add the beans, cream and cheddar cheese.
Turn off heat and pour the mix in a casserole dish.
Garnish with mozzarella and walnuts bake till done.
