Vegetarian Casserole Recipe - 5


Noodle Casserole


Ingredients:
4 tbsp - Oil
1 cup - Noodles
5 No - Scallions finely chopped
2 No - Carrots finely chopped
8 No - Button Mushrooms finely chopped
1/4 cup - Tofu diced
2 No - Peppers finely chopped
6 No - Chestnuts
1 No - Onion
1/2 tsp - Honey
1 tbsp - Garlic Paste
1/4 cup - Bean paste or sauce
1 tbsp - Vinegar
1/4 tbsp - Sichuan pepper or pepper
1 1/4 tbsp - Soy sauce
1 tbsp - Corn flour with water
Salt to taste


Method:
Soak the tofu in a mix of soy sauce, vinegar, garlic and honey.
Set aside the marinate for about 20 mins to 1/2 hour.
Stir-fry the vegetables and set them aside. Mori-Nu Tofu, Lite, Silken, Firm, 12.3-Ounce Boxes (Pack of 12)
Briefly stir-fry the noodles and add them to the vegetables, but combine only after adding the marinated ingredients.
Add the tofu marinade in a separate pan and cook for about 3-5 mins till aroma is released.
Add the corn flour to it and cook till well combined.
Take off heat and stir in the bean paste and add it to the noodle vegetable mix.
Place all the ingredients in casserole dish or a greased baking tray and bake.
