Vegetarian Burger Recipe
Under the regime of Chengis Khan (12th century), the Mongols conquered Moscow. Their diet mainly comprised of ground meat, which was soon adopted in the local Russian cuisine, under the name of ‘steak tartare’.
Over the years Russians refined the base dish. By adding chopped onions and eggs to it.
By the early 19th century German immigrants to the U.S. brought with them a dish called Hamburg style beef, which was brought from Russia to Hamburg around the 14th century.
It was salted minced beef, slightly smoked and mixed with onions and breadcrumbs.
It was in US that the recipe was refined to give us a modern day burger. A piece of vegetable, bean or meat patties sandwiched between bread.

Tip: Whenever you make foods like cutlets, patties, hot dog rolls it is important, to try and keep minimum wet ingredients, otherwise the outer coating of the item tears or gets soggy.
Therefore, a dry steam method is best for cooking ingredients like potatoes. You can place the potatoes in a dry vessel in a pressure cooker with water at the base or tie them in a plastic bag and prick it all over and microwave.
Similarly, if you using fresh steamed beans (kidney etc) strain and set aside, so that they are fairly dry while mixing.
Veggie Burger
Ingredients:
Few burger buns
1/2 cup – Oil
1/2 cup – Potatoes boiled mashed
1/4 cup – Peas boiled
1/8 cup – Peppers finely chopped
1/8 cup – Runner beans finely chopped
1/8 cup – Carrots finely chopped
1 No – Onion large finely chopped
1 tsp – Garlic grated or finely chopped
1 tsp – Ginger grated or finely chopped
1 tsp – Green chillies finely chopped
1/4 cup – Bread crumbs
1 tsp – Seasoned salt
1 tbsp – Parsley chopped
1 tsp – Cayenne pepper
2 tbsp – Corn flour
Garnish:
1 cup – Mayonnaise
1-2 No – Tomato thin slices

Method:
Heat oil in a pan and add peppers, french beans, carrots and onions and toss them for a min or two. Add the saute ingredients to the remaining vegetables along with potatoes and seasonings.
Grind the bread crumbs and add them in the vegetable mix with some corn flour to get a firm dough.
If you feel more seasoning is needed increase as per taste or if extra corn flour is needed for binding then add some.

Heat a heavy based pan (preferably cast iron) and add 2-3 tbsp of oil.
Place the patties on it and let it cook till brown. Then reverse the side and do the same (if you using cast iron pan you do not need crumbs and cornflour).
Alternatively, you can deep fry the patties. Drain on paper towel and set aside.
Sandwich the patties between buns with tomato, mayonnaise and lettuce.
You can choose to replace with vegetables like cauliflower, cabbage, spring greens.
