Vegetarian Burger Recipe – Thai Burger
Ingredients:
1/2 cup – Couscous
1 cup – Panner/tofu
2 No – Aubergines small eggplants finely chopped
1/8 cup – Bread crumbs
1 No – Red pepper large finely chopped
1/2 tbsp – Basil/cilantro finely chopped
1 No – Onion finely large chopped
2 No – Garlic cloves minced
2 tbsp – Thai red curry paste
1/2 cup – Broth/water
Salt to taste
Method:
Place the couscous in a bowl and pour stock or boiling water. Close the lid and let it sit aside for about 10 minutes or until all the liquid has been absorbed. Fluff up the grains using a fork. Set aside.
Heat oil in a pan fry the eggplant, onion for 1 min.
Add the chilli paste and stir for another minute.
Blend the tofu in a food processor add the bread crumbs and combine.
Add the seasonings adjust if needed.
Now shape them into patties and refrigerate covered for at least 20 mins.
Bake in the oven till brown or add little oil at the base of a pan and cook till both sides are brown and serve.
