Corn Cottage Cheese in Grilled Tomato Sauce
Ingredients:
2-3 tbsp – Butter
2 tbsp – Olive oil
1/4 cup – Onions cut cubes
1 cup – Corn kernels boiled
1/2 cup – Cottage cheese
1/4 cup – Peppers cut cubes
1/2 tsp – Taco seasoning
1/2 tsp – Garlic finely chopped
2 cup – Tomato sauce
1 tbsp – Jalapenos finely chopped
1/4 tsp – Any dried herb
Salt to taste
Garnish
1/2 cup – Sour cream
1 tsp – Chives
Method:
Mix the chives in sour cream.
Heat butter in a sauce pan and saute garlic, herb and jalapenos for a min.
Add onions and peppers and continue to cook till soft.
heat oil in a separate pan saute cottage cheese till light brown.
Add the cottage cheese and corns to the vegetables.
Season with salt and taco seasoning.
Add the tomato sauce and mix well. (follow the tomato sauce recipe, except that don’t add herbs).
Grease a casserole dish and pour the mixture in it.
Bake in a preheated oven for 8-10 mins.
Garnish with sour cream and serve.
Option: Serve with crisp tortillas. They go well with this recipe.
For grilled tomato sauce
Cut the tomatoes and brush them with olive oil.
Place them on a preheated grill and grill until they start to turn brown and the skin can be easily pulled off. Then puree the tomatoes leaving a little texture and set aside.
