Vegetable Recipes – Vegetable Medley

Ingredients:
2 tbsp – Olive oil
1 No – Pepper medium sliced
1 No – Carrot medium sliced
1 No – Zucchini medium sliced
1 No – Onion large sliced
1 No – Tomato large skinned diced
3 No – Garlic cloves chopped
1/4 cup – Couscous
1 tbsp – Raisins
1 tbsp – Walnuts finely sliced
3 tbsp – Lemon juice
1 cup – Yogurt
1/8 tsp – Nutmeg
4 tbsp – Cream cheese
1 tbsp – Thyme chopped
1 cup – Water
Salt to taste
Pepper to taste

Method:
In a saucepan, bring water to a boil.
Add salt and stir.
Add couscous and remove from heat and allow to sit for about 5 minutes.

Melt the butter in a large frying pan and lightly fry the vegetables, garlic and thyme for 2-3 mins.
Add the tomatoes and cook till soft.
Add the couscous and seasonings simmer and cook for 2-3 mins.
Mix the yogurt and cream cheese, raisins and add to the couscous. Mix thoroughly.
Turn off heat garnish with walnuts and serve.
