Vegetable Recipes – Vegetable Manchurian
This is an Indian adaptation of Chinese cooking to suit local flavours and taste.
Ingredients:
3 tbsp – Oil
1 cup – Cabbage chopped
1/2 cup – Carrots chopped
1/2 cup – Green beans chopped
1/2 cup – Green beans chopped
1 No – Onion chopped
1 tsp – Garlic finely chopped
1 tsp – Ginger finely chopped
1 tsp – Green chilli finely chopped
2 tbsp – Refined flour
2 tbsp – Corn flour
1/8 tsp – Pepper powder
Salt to taste
Water as required
1/4 tsp – Ajinomoto
Method:
Mix all the ingredients in a bowl and shape in the form of balls.
Dip it in the flour batter (should be of thick consistency) and fry.

Gravy
2 tbsp – Oil
1/2 tbsp – Garlic finely chopped
1/4 tbsp – Ginger finely chopped
2 No – Green chilli finely chopped
1 cup – Vegetable stock
2 tsp – Soy sauce
1/2 No – Green pepper small finely chopped
1 tsp – Corn flour
1 tsp – Vinegar
1/8 tsp – Pepper powder
1/4 tsp – Ajinomoto
2 tbsp – Coriander chopped
Salt to taste

Method:
Alternatively dissolve 1 stock cube in 1/2 cup water and add flour dissolved in water if you do not wish to make stock.
Heat oil in a pan and add the ginger, garlic chillies and fry till fragrant.
Then add the peppers and MSG and cook further.
Add the rest except for corn flour and mix well.
Now dissolve the corn flour in water and gradually keep pouring till the mix thickens (if you are not satisfied with the consistency you make increase the amount of corn or refined flour).
Tip: Add the manchurian balls only prior to serving or else they go soggy.
