Vegetable Recipes – Vegetable Chilli
Ingredients:
2 tbsp – Olive oil
1 No – Red onion large diced
1 No – Green bell pepper medium chopped
1 No – Red bell pepper medium chopped
1/2 tsp – Chilli powder or
2 tbsp – Jalapenos finely chopped
1/2 cup – Garbanzo beans
1/2 cup – Spinach chopped
1 No – Carrot medium chopped
1 cup – Tomatoes diced
4 No – Garlic cloves crushed
1/4 tsp – Cumin powder
1/4-1/2 cup – Water (if needed)
1 tsp – Oregano dried
2 tbsp – Lemon juice
1/2 tsp – Coriander powder
Salt to taste
Pepper to taste
Method:
Use can tomatoes or else wash, peel, blanch and then add.
Heat olive oil in a pan and saute the vegetables till pink. Add garlic, cook for 1-2 mins.
Add the tomatoes and seasonings.
Add the beans and water(if needed) cook further for 10-12 mins.
