Vegetable Recipes – Stuffed Capsicum (Bharva Shimla Mirch)

Ingredients:
1/4 cup – Oil
4 No – Capsicum/peppers small
5 No – Potatoes medium
6 No – Garlic cloves finely chopped
1 inch – Ginger finely chopped
3 No – Green chilli finely chopped
2 No – Onions finely chopped
1 tsp – Amchur (dry mango powder)
1 tbsp – Garam Masala
1/4 tsp – Turmeric (optional)
Salt to taste

Method:
Wash and scoop out the top of the capsicum so as to get a hollow for adding the filling.
Mash the potatoes and add the remaining ingredients and mix well.
Stuff the capsicum with mashed potato mix.
Heat oil in a pan add the stuffed capsicum and cook over low heat till tender. Or baste the outer covering with oil and let the capsicum cook in the micro till tender.

Potato mix
Boil the potatoes or give them dry steam in the pressure cooker or microwave.
It’s best to give dry steam, for this recipe to prevent the potatoes from getting soggy.
Place the potatoes in a dry vessel in a pressure cooker with water at the base or tie them in a plastic bag and prick it all over and microwave.
Remove let them cool and then peel the skin.

Tip: You can replace potato with panner. Also you can use a mix of potato and panner, potato and cheese, panner and cheese. If adding cheese you should bake the dish. Panner (1/2 kg) Cheese (1/4 cup)
