Vegetable Recipes – Stuffed Aubergines (Bharva Baingan)
Ingredients:
1/4 cup – Oil
4 No – Aubergines medium
4 No – Small Potatoes
1/2 cup – Coriander chopped
1 cup - Coconut grated
4-5 No – Garlic finely chopped
1/2 tsp – Ginger Stick finely chopped
2-3 No – Green chillies finely chopped
3 No – Onion medium finely chopped
1 tbsp – Dry mango powder (Amchur) or Lemon Juice
1 tsp – Red chilly powder
1 tbsp – Garam Masala
1 tbsp – Coriander powder
1/4 tsp – Turmeric
Salt to taste

Method:
Grate coconut and then add the remaining ingredients to it and mix well.
Make 2 small slits (half way) in the aubergines and potatoes so as to make way for filling them with the masala.
Add the oil and cook the potatoes and aubergine till done.
Tip: You can replace coconut with peanut powder and fenugreek leaves. Peanut (4 tbsp) Fenugreek (1/4 cup)
You can replace coconut with peanut powder and spinach. Peanut (4 tbsp) Spinach (1/4 cup)
Use the ready Marathi kala masala as a stuffing.
You can use coconut with all the above as well.
To make stuffed okra and stuffed green chillies mix the last 6 ingredients and follow the same process.
