Vegetable Recipes – Shanghai Stir Fry
Ingredients:
5 tbsp – Oil
250 gms – Mushrooms sliced
150 gms – Broccoli cut 1″ pieces
150 gms – Asparagus cut 1″ pieces
1 cup – Bean sprouts
100 gms – Bean curd cubes
1/2 cup – Cashews or almonds chopped
2 tbsp – Peppers finely chopped
2 No – Garlic chopped
1/2 tsp – Sugar
1 tbsp – Soy sauce
1 tsp – Cornflour +
1 tbsp – Cold water
Salt to taste
Method:
Heat oil in a pan stir-fry bean curd until golden. Remove and set aside.
Add garlic, cashews and peppers. Fry on a high flame for 3-4 mins.
Add seasonings simmer for 5-7 mins.
Serve over rice if desired.
Increase heat and add cornflour mix and cook for another 2-3 mins. Serve hot.
