Vegetable Recipes – Shahi Panner
Ingredients:
2 tbsp – Oil
1 cup – Panner diced
2 No – Onion large
1 inch – Ginger chopped
1/2 – Red chilly powder
5-6 No – Garlic chopped
1 tsp – Coriander powder
1 tsp – Garam masala powder
1 No – Bay Leaf
1/4 cup – Tomato puree
1 tbsp – Tomato paste
2 tbsp – Coriander chopped
4 tbsp – Cream
1/4 tsp – Dry fenugreek (kesuri methi)
Salt to taste

Method:
Grind onion ginger, garlic to make a paste.
Heat oil in a pan and add the bay leaf, onion paste. Fry till they turn brown.
Add the coriander, garam masala powder and salt and mix.
Add the tomatoes, and cook till the mix is fragrant and oil oozes from all sides (8-10 mins).
Then over low heat stir in the fenugreek powder and cream. Let the mxiture cook for few mins.
Add the panner mix well and serve hot. Garnish with coriander and serve hot with rice or roti.
You can also grate/finely chop onion, ginger and garlic instead of making a paste.
