Vegetable Recipes – Pumpkin Coconut

Ingredients:
3/4 cup – Red Pumpkin (kaddu)
1 No – Onion medium chopped
1/2 tsp – Ginger paste
1/2 tsp – Garlic paste
1/4 tsp – Red chilli powder
2 No – Green chillies
1/2 – Cumin seeds
1/4 tsp – Turmeric powder
8 No – Curry leaves
Salt to taste

Paste
3 tbsp – Coriander seeds
1 tbsp – Til (sesame seeds)
2 tbsp – Desiccated coconut
2 tbsp – Peanuts
2 tbsp – Channa dal (yellow gram)
1 tbsp – Poppy seeds

Method:
Heat a pan and roast the paste ingredients in it. Then grind to make a paste using some water.
Add some more oil to the pan and add cumin seeds, onions and chillies and cook till brown.
Then add the paste and powders and some water cook for 5 mins.
Add the pumpkin cook for few mins. Serve hot.
