Vegetable Recipes – Potato Skin with Salsa

Ingredients:
2 tbsp – Olive oil
4 No – Potatoes medium
1 No – Onion small diced
2 cup – Tomatoes deeeded and diced
1 No – Green chilly finely minced
1 No – Red bell pepper seeded small finely chopped
1 No – Lemon juiced
1 tbsp – Tabasco
Salt to taste
Cheese as desired

Method:
Combine 3rd to 9th ingredient and set aside.
Wash thoroughly and pierce the potato skin with a knife and bake for about 40 mins.
Remove and let the potatoes cool.
Halve the potatoes lengthwise and scoop out all except for 1/8th of the potato leaving the skin intact.
Brush the inside of the potato with olive oil and bake the skins on either side for 5-7 mins.
Spoon the salsa inside the skin and spread evenly.
Add the cheese and bake till it melts.
