Vegetable Recipes – Peppers in Ginger Sauce & Spiced Peppers
Ingredients:
1 tbsp – Oil
1/2 cup – Mixed bell peppers chopped
1/8 cup – Broth
1 tsp – Soy sauce
1 tbsp – Ginger grated
1 No – Green chilli finely chopped
1 tsp – Honey
4 tbsp – Spring greens chopped
Salt to taste
Method:
Heat oil in a pan add chillies, ginger and spring greens cook till fragrant over high flame.
Add the peppers and sauté for 1-2 mins.
Then add the remaining ingredients and let the mix come to a boil (most liquid dries).
Turn off heat and serve.
Spiced Peppers
Ingredients:
1 tbsp – Oil
1/2 cup – Mixed bell peppers chopped
1/2 tbsp – Cashewnuts
1 tsp – Soy sauce
1 No – Onion small chopped
1 tsp – Lime juice
1/2 tbsp – Ginger
1/2 tbsp – Chilli powder
1/2 tsp – Sugar
1/2 tbsp – Soy bean/miso paste
1/2 tbsp – Sesame seeds
Salt to taste
Method:
Steam the peppers till little tender and set aside.
Using mortar and pestle crush cashew nuts and sesame seeds. Mix with chilli powder, sugar, lime juice, miso, and soy sauce.
Heat oil in a pan or wok and fry onion and garlic until brown. Transfer them into the mortar and pestle and mix thoroughly.
Add peppers to the wok fry the entire mixture for about 2-3 mins.
