Vegetable Recipes – Methi Corn Malai

Ingredients:
2-3 tbsp – Oil
2 bunch – Fenugreek leaves (methi)
1/2 cup – Sweet corns boiled
4 tbsp – Malai or fresh cream
2 tbsp – Poppy seeds
1 No – Onion large grated
1/4 tsp – Ginger grated
1 tbsp – Garlic finely minced
2 No – Green chillies finely chopped
1/4 tsp – Cumin seed
1 tsp – Coriander powder
1/2 tsp – Garam masala
1 tbsp – Yogurt
1/4 tsp – Turmeric (optional)
Salt to taste

Method:
Wash the leaves properly under running water. DrainĀ  and set aside to dry atleast for 4 hours.
Heat oil in a pan over low flame add the leaves and fry till crisp. Drain and keep aside.
In the same pan add cumin seeds once they splinter add onions, ginger and garlic. Cook till brown.
Add the dry masala and cook for 1-2 mins.
Add the corns, peas and methi. Mix and cook for few minutes.
Beat poppy seeds and yogurt and add it to the mix.
Add some water about 1/8 cup. Let them simmer for a while.
Stir in fresh cream and mix well and hold on for another 5-7 mins or so. Serve hot.
