Vegetable Recipes – Masala Arbi

Ingredients:
Oil as needed
150 gms – Arbi peeled chopped (Taro/Colocassia)
1/4 tsp – Carom seeds (ajwain)
1 No – Onion large chopped
1/4 cup – Tomatoes chopped
1/4 tsp – Red chilli powder
1/4 tsp – Garam masala
1/2 tsp – Dry mango powder
1/4 tsp – Turmeric
2 tbsp – Coriander chopped
Salt to taste

Method:
Heat oil and briefly fry the taro and set aside.
Grind onion and ginger coarsely.
Heat oil and add the above mix and carom seeds and cook till brown.
Add the seasonings and tomatoes cook for 7-10 mins.
Add taro and cook for a few more minutes (till combined). Taste of India with Six Spices: A Simple Concept of Indian Cooking  (the water quantity can be increased or decreased as per your taste).
Garnish with coriander and serve.
