Vegetable Recipes – Glazed Pumpkin

Ingredients:
1 cup – Pumpkin cubed
1 tbsp – Pumpkin seeds toasted
4 tbsp – Olive oil
1-2 tsp – Honey
1/2 tsp – Ginger grated
1/2 tsp – Garlic minced
1 tsp – Mustard
1 1/2 No – Orange
Salt to taste

Method:
Squeeze the juice of oranges and combine with mustard and honey.
Heat oil in a pan and saute ginger, garlic and pumpkin till brown.
Reduce heat and stir in the orange mix. Cook over high flame till most liquid gets absorbed 2-3 mins.
Turn off heat garnish with pumpkin seeds and serve.

Roasting pumpkin seeds
Remove the seeds from the pumpkin and wash thoroughly (if any orange pulp will be left then the seeds will burn leaving a bad taste).
Preheat the oven and meanwhile spread the seeds evenly over a cookie sheet.
Stir the seeds to make sure they roast evenly until golden brown.
Alternatively, you can do the same over gas at a low temperature in a heavy bottomed pan.
