Vegetable Recipes – Dryfruit Vegetable Mix
Ingredients:
4 tbsp – Oil
1 cup – Mixed vegetables par boiled
1 No – Onion
1/4 cup – Dry fruit paste
1 tbsp – Ginger
1 tbsp – Garlic
1/4 tsp – Pepper
4 No – Green chillies
Salt to taste
Method:
Dry fruit
Cashew, raisins, walnuts and almonds soak in water for atleast 20 mins and then grind.
Wash, peel chop and boil the onions in water till soft. Drain and allow to cool.
Grind the onion, ginger, dry fruits and garlic to a fine paste.
Heat oil in a pan and add the above mix and fry till golden brown over low heat and at regular intervals keep stirring to prevent the masala from burning (approx 20-25 mins).
Add the masalas and vegetable and cook for a few minutes (if the mix is too thick add water as needed).
Remove from heat and serve.
