Vegetable Recipes – Curried Aubergines

Ingredients:
1 tbsp – Oil
6-8 No – Aubergines  small variety quartered
1 No – Bay leaf
2 tbsp – Mushroom
1/2 tsp – Garlic
1 tbsp – Parsley
1 tbsp – Lemon grass
1/2 tsp – Paprika
1/4 tsp – Turmeric
1/4 tsp – Stock cube
1/2 tsp – Curry powder
1/2 tbsp – Soy sauce
1 tbsp – Tomato paste
2 tbsp – Coconut milk thin
Salt to taste
Pepper to taste

Method:
Wash slice and then half the aubergines.
Steam or boil drian and pat dry. Then roughly chop them and add to the mix.
Blend the mushroom, garlic, lemon grass and parsley.
Heat oil in a pan add the bay leaf and above paste and cook  for a few mins (5-7 mins).
Then add the seasonings and tomato and coconut milk. Combine well (2-3 mins).
Add the aubergines and serve.
